Dubai Municipality
In January 2011 it became a requirement for all food businesses in Dubai to have at least one certified Person in Charge (PIC) trained in food safety. The PIC actively manages food safety practices in an establishment and is accountable to both their employer and the Dubai Government for making sure that the employees on their shift are following established policies and procedures regarding food safety.
Highfield Chairman Richard Sprenger worked very closely with the Dubai Municipality to put this scheme in place. For several years now Highfield has been approved to certify trainers and Persons in Charge in Dubai, and Highfield's PIC qualification has gone from strength-to-strength. Highfield is by far the leading awarding organisation in the Middle East providing safety and PIC qualifications. Highfield has worked with some of Dubai's most respected companies.
Salama Fikira
The tourism sector is a vital contributor to economies worldwide. As an example, in Kenya, tourism is the third largest contributor to GDP after agriculture and manufacturing. It is clear that the key to fighting this pandemic is good hygiene, social distancing and wearing of masks when outdoors. Further, we knew that infection prevention and control starts with education and we had the opportunity to help the fight against COVID-19 by giving organisations the tools to prevent it spreading in the workplace including hotels, lodges, food establishments, and health care settings. Our relationship with Highfield was the perfect vehicle to assist with this.
Once we read the Ministry of Tourism’s Health and Safety Protocols for the ‘New Normal’, it was clear that our accredited training courses could assist in positioning Kenya as a safe and secure destination, appealing to the needs of the “germaphobic” tourist. To restore confidence in the sector, organisations need to make short, medium- and long-term commitments to health and safety. The requirement for regulatory adherence to staff training was outlined on the protocols and are aimed at creating customer confidence and ensuring staff safety.
The Highfield Infection Prevention and Control courses are ideal as they are aimed at the industry’s workers and management, they are accessible, short in duration and highly cost effective. We have been delivering to establishments for the last four weeks and intend to continue delivering them in the future.
Formed in 2005, the Salama Fikira group of companies is a specialist security, risk management and training provider, operating across the globe from our Headquarters in Nairobi. In 2016 we started to work with Highfield International, a global leader in safety, security and compliance qualifications.

‘Highfield has been doing consultations for Emarat to become local food safety management compliant. The Highfield team offer excellent service and have shown amazing levels of innovation in the face of challenges.
The training enabled the staff members working in production, store, and quality to apply the methodology across the board and allowed for a heightened sense of awareness regarding possible hazards that may occur along the entire process of receiving, processing, packaging and storage.
The training also provided the necessary tools for the Food Safety Team to perform their duties adequately.
Our centre manager, Ms Aiman, has been very helpful assisting us in all aspects of conducting PIC level 2 training as well as implementing necessary documentation. The advice given by her is always reliable and precise.
I would like to thank Highfield for the effort over the years and for what they will do for us into the future.’
